Grace Browning is a liquid condiment of Caribbean origin, made mainly with cane sugar, water, caramel, salt and sodium benzoate as a preservative. Its main function is to provide an intense dark brown color and a subtly sweet, smoky and bitter flavor, derived from caramelized sugar.

It is frequently used in meat stews, sauces, gravies and marinades to give color and complexity. In confectionery, it is a basic ingredient of Caribbean fruit cakes such as Black Cake and some bread recipes. Because of its concentration, only a few drops are required to obtain the desired effect. It should be stored in a cool, dry place, away from direct light.
